Common food borne pathogen and prevention

A list of common food borne diseases or illness gives you a good idea about different types of foodborne diseases or illnesses. The increased rate of foodborne disease has become a great concern over the world. Salmonellosis

Salmonellosis is a common intestinal infection, caused by Salmonella spp. This disease includes diarrhea, vomiting, abdominal pain, chills, fever, and headache, etc. Raw milk, cheese, raw meat, raw eggs, fruits, and vegetables are good media for salmonella growth.

Shigellosis

The symptoms of Shigellosis are diarrhea (sometimes bloody diarrhea), fever and abdominal pain. Shigellosis is a severe intestinal infection, caused by Shigella. The genus Shigella is a foodborne bacterial pathogen. It has four types of species: S. flexneri, S. dysenteriae, S. sonnei, and S. boydii.

Bacillus cereus infection

Bacillus cereus – a food-borne pathogen- causes intestinal infection or food poisonings. This bacteria grows well on various foods such as milk, cheese, cereal, rice, red pepper, and fermented food. More than 104 CFU/g of B. cereus consumed with food is enough to cause disease in the human body. The diseases include diarrhea and vomiting. So, be serious about B. cereus.

Enterobacter sakazakii infection

Enterobacter sakazakii is an opportunistic pathogen that causes a 40-80% mortality rate in the infant. It causes infection in the intestine and nervous system resulting life-threatening effect on the human body. The symptoms of this infection include septicemia, ventriculitis, cyst formation, and enterocolitis. Milk powder and other infant formula contain these bacteria. Other food sources such as cereal fruits vegetables milk meat and fish also support the growth of these bacteria.

Escherichia coli enteritis

Escherichia coli enteritis is a human gastrointestinal disease caused by Escherichia coli. This infection refers to the inflammation of the small intestine. This infection often leads to traveler’s diarrhea.
Escherichia coli O157: H7 is one of the major foodborne bacterial pathogens. This bacteria causes contamination of green leafy vegetables and fruits. People get infected with these bacteria by consuming these vegetables and foods.

Listeriosis

Listeria monocytogenes is a major foodborne pathogen that causes Listeriosis. It often causes death. Cheese is one of the major foods that harbor this pathogen. Cheese especially soft cheese support the growth of listeria.

 

Staphylococcus aureus infection

This infection is caused by Staphylococcus aureus. This bacteria is one of the major causes of intestinal infection. This infection is occurred by consuming milk cheese, and other dairy products contaminated with this bacteria. A little concentration of 103 CFU/ml of S. aureus in cheese can produce enterotoxin A, thereby causing vomiting and diarrhea.

Yersiniosis

Yersiniosis is a zoonotic infection caused by Yersinia enterocolitica. Yersinia enterocolitica is a common foodborne bacterial pathogen found on raw pork, ready to eat pork and milk. The symptoms of this disease include septicemia, enterocolitis, fever, bloody diarrhea, abdominal pain, and mesenteric lymphadenitis.

Clostridium perfringes infection

This infection is caused by Clostridium perfringes. It is a major foodborne pathogen. It secretes enterotoxins during spore formulation causing diarrhea and abdominal cramp. It also releases alpha toxins when poultry is infected with it. The bacterium causes several diseases such as gas gangrene (clostridial myonecrosis), necrotic enteritis, and gastrointestinal infections in humans.

Campylobacteriosis

The cause of human campylobacteriosis is Campylobacter jejuni. The symptoms of campylobacteriosis are fever, bloody diarrhea, abdominal pain, and malaise. The main cause of these diseases is the consumption of undercooked poultry meat, unpasteurized milk, and water contaminated with Campylobacter jejuni.
